Dr. Kathy's Carrot Raisin Pilaf

Spring time brings up the thoughts of bunny rabbits and what do bunnies love the most? Sweet delicious carrots. Bunnies know carrots are a superfood. However, we humans frequently underrate the carrot. A vegetable often thought of only for placing in soups and using in the baby form for dip. The carrots however contain a deep orange pigment beta-carotene and this has been associated with decreased risk of coronary heart disease. It has also been associated with a role in cancer prevention. Perhaps most famous is carrots effect on vision due to their high content of Vit A. Finally there is literature to support the benefits of carrots on brain health, skin health, and anti-aging. So next time you are looking for a superfood give the economical carrot a try.  






• 3 cups water

• 2 cups of wild or brown basmati rice

• 2 carrots peeled and grated

• ½ pound of baby spinach cleaned

• ½ cup of raisins



In a 2 quart saucepan bring the water to a boil, add the 2 cups of rice, and return to a boil. Lower the heat and simmer for 45 minutes.


Remove from the heat, add the carrots and spinach, replace the lid. Let stand for 15 minutes.


Transfer to a mixing bowl, add the raisins, and fluff with a fork. Serve
